Oaxacan Food History

Oaxacan, Mexico is known for its unique and diverse culinary culture. A mixture of flavors in the food comes from a history of both native and European influence. Add this to my Recipe Box.


Diversity


Oaxaca has a diverse mixture of cultures, and the food draws influence from both the Aztecs and the Spanish. After the conquest by the Spanish, ingredients such as mulato chile, tomatoes, peanuts, avocados and chocolate were incorporated into the cuisine.


Signature Dish


Oaxaca is known as the "Land of Seven Moles," offering a variety of traditional and contemporary recipes. It is thought that the popular mole dish originated in Oaxaca, and it can be found in many dishes served.


Signature Chocolate


Oaxaca is also known for is hand-ground and spicy chocolate, made with a combination of cacao, almonds, cinnamon and sugar. The cacao seeds were used as medicine and money before the Spanish conquest, and now Oaxacan chocolate has a reputation of being the best in Mexico.
