Because turkey is leaner than beef, turkey burgers can often be bland and dry. The key to making a delicious, juicy turkey burger is adding ingredients that provide moisture in place of the fat that you normally find in beef. The type of turkey you use is also a factor. Ground turkey with a higher fat content, such as 85/15, will make juicier burger than extra lean. You can find ground turkey in the meat or freezer section of most major grocery stores. Instructions
1. Combine the turkey, egg and Worcestershire sauce in a large bowl. Mix the ingredients together with your hands until thoroughly blended.
2. Divide the turkey into four equal parts. Shape each part into a loose patty with approximately 2 tbsp. of crushed ice in the center of each. The ice will provide steam while the burgers cook and keep them moist.
3. Sprinkle salt and pepper to taste on each side of the patties.
4. Spray a skillet with nonstick cooking spray. Heat the skillet to high.
5. Add the patties to the skillet and brown each side. Reduce the heat to medium and cover the skillet.
6. Let the patties cook until a meat thermometer inserted in the center reads 165 degrees Fahrenheit. Turn the patties with a spatula once or twice while cooking.
7. Transfer the finished patties to a plate. Let them rest for 10 minutes before serving. Resting allows the juices to spread throughout the meat.
