Bamboo is a wise choice for cutting board material because it is a sustainable material, it is attractive and it is not difficult to maintain. A cook must hand-wash the bamboo cutting board instead of washing in the dishwasher, yet this task seems worthwhile because of the beauty of the bamboo cutting board. Aside from that, the only maintenance required for a bamboo cutting board is periodic seasoning with food-grade mineral oil. Add this to my Recipe Box.
Instructions
1. Wash the bamboo cutting board by hand in warm, sudsy water. Rinse the cutting board and dry it completely with the dishtowel.
2. Pour a small amount of mineral oil onto the center of the cutting board. The amount of mineral oil to use depends upon the size of the cutting board. For a 12-inch square cutting board, pour a quarter-size pool of mineral oil onto the cutting board. More or less mineral oil may be required, depending upon how much oil the cutting board absorbs.
3. Use your fingers to rub the mineral oil into the surface of the cutting board, making sure you cover every bit of cutting board surface (front, back and sides) with the oil.
4. Allow the mineral oil to sit on the cutting board for approximately fifteen minutes to penetrate into the bamboo fibers.
5. Rub the excess mineral oil off with the soft cloth, until the cutting board is no longer greasy.
