Hardboil Farm Fresh Chicken Eggs

Learn the secret to boiling and peeling fresh eggs.


If you have your own chickens or get fresh eggs from a neighbor, you know how lucky you are. Farm-fresh eggs are flavorful and delicious. But one drawback is that they are impossible to peel when hard-boiled. When you need a perfectly peeled hard-boiled egg, don't turn to store-bought eggs. There's a simple trick to use for fresh eggs -- you just have to plan ahead. Add this to my Recipe Box.


Instructions


1. Place the farm-fresh eggs in a container or carton on the kitchen counter for three days. The eggs won't spoil, but the time out allows the egg white to dehydrate and pull away from the shell.


2. Move the eggs to a pot of cool water on the third day. Place the pot on the stove and bring the water to a rolling boil.


3. Turn off the burner but leave the pot on the stove until the water stops boiling and cools to room temperature. Once the pot is cool enough to handle, drain the water from the eggs.


4. Place the boiled eggs in the refrigerator for a few hours. The chilled eggs should peel easily.
