Gas Grill a Turkey


There is nothing quite like the flavor of a freshly roasted turkey, unless of course it is the flavor of a turkey cooked on the grill. It may sound a little daunting, but the procedure isn't that different from roasting the turkey in the oven. Cooking a turkey on the grill not only improves flavor it keeps the heat out of your home, allowing you to enjoy grilled turkey any time of the year. Add this to my Recipe Box.


Instructions


1. Remove giblets from the body cavity and rinse the turkey inside and out with cold water. Pat dry with a paper towel.


2. Tuck the legs inside the wire closure and place breast side up on a wire rack in a disposable roasting pan. You can use an old baking pan if you prefer, but expect it to get smoky.


3. Season the turkey with salt and pepper or brush with an assortment of your favorite herbs and a light coating of vegetable oil.


4. Light one burner on the gas grill and place the pan on the opposite side. Close the lid and roast for 12 to 14 minutes per pound. It may take four hours or more for your turkey to cook completely.


5. Monitor the heat closely and try to maintain an even 350 degrees. If your grill does not have a thermometer, place an oven thermometer inside the grill. If the grill overheats, turn down the burner and open the cover until it cools down to the desired temperature.


6. Baste every 30 minutes to distribute flavor and increase tenderness. Add small amounts of water to the bottom of the pan if it becomes dry and the drippings begin to burn. You can use these drippings later to make gravy.


7. Remove the turkey from the pan approximately 30 minutes before it should be done and place it directly on the grill. Allow to continue cooking until a meat thermometer registers 165 degrees in the thigh and 170 degrees in the breast. Turn the turkey occasionally to attain a nice even brown.


8. Remove from the grill and allow to set for 15 minutes to make carving easier.
