Grilled tilapia maque choux uses Louisiana Cajun spices along with healthy seafood, making for a meal that is both great tasting and good for you. Maque choux can be used as a side dish; it does well complementing freshly grilled tilapia. Plan on spending 45 minutes to an hour on preparation and cooking this main dish. Instructions
1. Strip the corn kernels from the cob using a knife.
2. Heat oil in a pan. Add onion, celery and bell pepper to the oil and saute. Add tomatoes, corn and mushrooms. Cover and simmer on low heat for 30 minutes.
3. Heat your grill. Spread oil on both sides of the tilapia fillets, add salt and pepper.
4. Place tilapia on hot grill, cooking for two and a half minutes, turning, and cooking for two and a half minutes longer. Pull from grill.
5. Add tilapia and green onion to the maque choux pan, along with any other seasoning to taste. Cover and simmer an additional 10 minutes.
