Wheat berries are actually unprocessed wheat kernels. Only the exterior hull on the kernel is removed. Wheat berries are high in fiber and full of minerals and vitamins. The berries are available in different varieties such as hard red winter, hard white and soft white. All the varieties require the same preparation techniques. Instructions
1. Examine 2 cups of wheat berries carefully to discard any stones. Rinse the wheat berries under cool running water.
2. Pour the wheat berries into a heavy-bottom saucepan. Cover the berries with 7 cups of water. Add the salt to the water.
3. Bring the water to a boil. Reduce the heat and cover the wheat berries. Simmer the berries for one hour. Stir the berries occasionally to prevent burning.
4. Drain the wheat berries. Rinse the berries under lukewarm water. Serve the wheat berries while still hot.
