Prosciutto stuffed turkey with fresh sage is an incredibly easy to prepare dish with elegant look and taste. Combining the taste of turkey with savory, salty prosciutto and sage leaves, this is a rich, complex dish that makes an excellent quick main course for a dinner party. Serve with braised vegetables, a mixed greens salad, a loaf of hot ciabatta bread with rosemary butter and a glass of crisp, dry white wine with just a touch of sweetness. Add this to my Recipe Box.
Instructions
1. Wrap the turkey fillets in a sheet of plastic wrap and pound the meat with a mallet or rolling pin to flatten it. Cut each of the turkey fillets in half lengthwise.
2. Trim the prosciutto slices to fit the halved turkey fillets and place a slice of prosciutto over each one. Put a fresh sage leaf on the top and roll up the meat, securing with a toothpick or kitchen string.
3. Heat the extra virgin olive oil in a large sauté pan over medium heat and add the onion. Cook for 3 to 4 minutes and add the turkey rolls to the pan. Cook the rolls for 4 to 5 minutes or until browned on all sides.
4. Pour the white wine and chicken stock into the pan with the turkey and simmer for 12 to 15 minutes over low heat. Serve immediately.
