Roast Soy Beans

Roast soy beans in the oven to create a healthy snack.

Soy beans, also known as soy nuts, are low in fat and high in protein. The soy beans contribute to good heart health. The roasted soy beans have a crunchy texture, and you can season them to suit your tastes. Dried soy beans are often consumed as a snack, but you can also add them to salads or meals to add texture. After you roast the soy beans, they need to be stored in the refrigerator in an airtight container to keep them from going rancid. Add this to my Recipe Box.

Instructions

1. Rinse the soy beans in a colander under cool running water.

2. Place the soy beans in a bowl and cover them with cold water for eight hours. The beans will double in size, so select a bowl large enough to hold them.

3. Drain the soy beans in a colander. Rinse them under cool running water and shake off the excess water.

4. Heat the oven to 350 F. Spread the soy beans in a single layer on a baking sheet.

5. Place the soy beans in the oven. Stir them every five minutes to prevent the beans from burning. Roast the beans for 25 to 30 minutes until they are crunchy and brown.

6. Remove the soy beans from the oven. Allow them to cool completely. Place the soy beans in a storage bag or airtight container in the refrigerator. Season them with salt, pepper or garlic powder if desired. Coat them lightly with oil to ensure that the seasonings stick.
