Pair scallops with healthy vegetables for a complete meal.
Scallops are healthy meal when broiled and served with a sauce containing healthy ingredients. Pair your scallops with some steamed vegetables, or a salad and you have a balanced meal that will be kind to your waistline. Scallops are easy to prepare, and cook in very little time. Be sure to rinse your scallops well to avoid biting into sand. Try scallops as your next healthy dinner for you and your family. Add this to my Recipe Box.
Instructions
1. Preheat the broiler.
2. Place 1 pound of scallops in a colander, and rinse both sides well with cold water.
3. Dry scallops with paper towel. Place on a plate and put aside.
4. Cover a cookie sheet with aluminum foil, and put it aside.
5. Spray foil with cooking spray.
6. Place 2 tbsp. lime juice and 1 tbsp. olive oil in a bowl and whisk together well.
7. Place scallops in the bowl and toss until the scallops are completely covered with the mixture.
8. Place scallops on the baking sheet in a single layer - do not put any scallops on top of one another.
9. Place in broiler for 5 minutes. Cut through scallops to be sure that they are opaque inside. When they are opaque, flip and broil for another minute.
10. Place scallops on a plate and carefully pour the juice from the pan on top.
