Serve Smoked Turkey

Fresh turkey is popular seasonally, but smoked turkey, like any smoked meat, is a year-round treat. Whether you smoke your own whole turkey in a smoker, and need to use up left overs, or just buy already prepared smoked turkey, you have a delicious, moist meat that can be used in soups, wraps, pasta and sandwiches.


This sandwich incorporates some of the elements of Thanksgiving. Add this to my Recipe Box.

Instructions


Onion


1. Slice the onion. If you like raw onion, chop in any manner you choose. If not, grill the onion, first brushing lightly with olive oil.


2. Crumble the blue cheese and mix with the yogurt. Stir in the cranberries.


3. Spread the cheese mixture on 4 of the bread slices. Top with the onions. Distribute the turkey over each, then top with the remaining slices of bread.


4. Press the sandwiches so the ingredients all come together. Refrigerate for about two hours to give the flavors a chance to develop.
